It tastes like berry syrup, which is my favorite, without all the sugar and I get more fiber. Pancakes I made the protein pancakes for the first time this evening. I used the egg white/cottage cheese/oatmeal recipe. I added some cinnamon and vanilla and used a little light syrup on top (I figured if it was good I would try the sugar free syrup next...baby steps LOL) Well it wasn't terrible..but it was just kinda...well tasteless. However, today I tried a wonderful and totally easy pancake recipe that needs none of that: Mash a banana Add an egg and a little salt, if you want. Fry like a pancake. Serve with maple syrup or powdered sugar. These are really really tender, but everyone loved 'em. I have NT but when I looked in it for a pancake recipe, I looked in the subject index and not the recipe index so I feel a little stupid at the moment. I used half wheat flour and half barley flour soaked in buttermilk about 12 1/2 hours. They were light and fluffy and didn't have a sour taste at all. I was out of maple syrup but had raw honey and sorghum to put on them. Maple syrup would have been better but can't get organic locally. I'll need to order some or buy next time I make a trip to Denver. Stuck to my spatula once I got it on there! Had a pretty color but was very soft. I added some ground flax to the 2nd batch in hopes of a nutty taste. Didn't happen. It has you shred and then soak the potatoes (No idea why soaking for potatoes). Fried them in CO and they were great. The other day I did an adjusted atkins version -- cauliflower " potato " pancakes. When I had done them in the past from the atkins recipe, they were hard to flip and broke up a lot. This time I added just a little Arrowroot flour and they flip fine. Chop up a small onion, add about 1/2 a head of raw cauliflower, chopped fine ( or course and then chopped with a hand blender with the other ingredients). 2 eggs, salt, pepper, about 1/2 cup or less arrowroot flour, and splash of kefir, enough for it to mix without being too runny. Heat plenty of coconut oil in a heavy frying pan. Add about a tbl at a time only. They get nice and crispy on the edges and tender in the middle. It reminds me of a Korean version ... they mix the eggs etc. with kimchi. Fries up very nicely and has lots of flavor. They don't chop the kimchi up terribly fine, it is in big chunks, and they pancakes come out something like Egg Foo Young.
