No it isn't. I don't believe in God, either, but I don't get upset if

people mention their beliefs a little - as long as it doesn't go overboard

Gaye your fine darling. As I said, I am not a Christian, but still liked

your little story. I sent it to my partner. (I love children)

I've used extracts, ground nuts, cinnamon, anise, chocolate protein

powder and sometimes sugar free syrups.

I top the pancakes with lite syrup and frozen berries smashed into the

syrup. It tastes like berry syrup, which is my favorite, without all the

sugar and I get more fiber.

I add a packet or 2 of plenda into the batter and throw in some

berries as well. There is one brand of sugar free syrup (I think it

may be called Maple Grove or something like that) which has only 10

calories per 1/4 cup and (and NO sugar) and tastes pretty good.

I also use Splenda in the recipe and I top them with a little

Brummel & Brown and Smucker's Sugar Free Blackberry Jam. I have also

used the Maple Grove Farms Sugar Free Syrup which is also good and

is sweetened with Splenda instead of NutraSweet.

You can add 1-2 tsp of peanut butter

Decrease the carbs a bit or increase the protein and add canned

pumpkin (not pumpkin pie mix, but canned pumpkin)

Add lemon extract

Decrease the carbs or incresae the protein and top with a few berries

put in the microwave to form a " sauce "

I know someone who makes the batter and then bakes them like muffins

for variety also.

Do you have NT? I've never made sourdough pancakes, but I have made

the pancakes recipe in NT several times.

Soak 2 cups flour in 2 cups buttermilk, or yogurt or kefir overnight

(12-24 hours). When ready to make the rest of the batter, add 2

eggs, 1/2 teaspoon sea salt, 1 teaspoon baking soda and 2 tablespoons

melted butter and mix it all together. If the batter is too thick,

you can add some water to thin it a bit.

I don't use a recipe, but I have just soaked some

flour in kefir (1 cup each). Then add an egg or two

in the morning and a little baking powder and cook.

It may need a little more flour.

However, today I tried a wonderful and totally

easy pancake recipe that needs none of that:

Mash a banana

Add an egg and a little salt, if you want.

Fry like a pancake. Serve with maple syrup or

powdered sugar.

These are really really tender, but everyone

loved 'em. I like the " no measuring " part.

The mashed banana pancake sounds interesting. I'm going to try that. I used

the recipe posted by which is in NT. I have NT but when I looked

in it for a pancake recipe, I looked in the subject index and not the

recipe index so I feel a little stupid at the moment. I used half wheat

flour and half barley flour soaked in buttermilk about 12 1/2 hours. They

were light and fluffy and didn't have a sour taste at all. I was out of

maple syrup but had raw honey and sorghum to put on them. Maple syrup would

have been better but can't get organic locally. I'll need to order some or

buy next time I make a trip to Denver. Next time I try this recipe, I'll

use half oat flour instead of the barley I used and see how they turn out.

I love easy recipes like that! Wish more were posted. We ought to

start a thread for easy resipes...

Liked it so much I tried it this morning. It got a thumbs

down...sorry. Did not like the taste. My tummy kinda hurts a little

from eating it. It's hard to flip over too. Stuck to my spatula once I

got it on there! Had a pretty color but was very soft. I added some

ground flax to the 2nd batch in hopes of a nutty taste. Didn't happen.

Wonder what it does to the carb count of the banana to cook it?

They really are VERY soft. I'd think a little flour would help.

I don't like " mushy " foods myself but the family loved them ...

I used a lot of oil which makes them easier to flip. I think

it's one of those recipes you either love or hate (I don't like

it, but the folks I have to feed for breakfast do!).

We tried the potato pancake recipe in NT a while back. It has you shred

and then soak the potatoes (No idea why soaking for potatoes). Fried

them in CO and they were great.

The other day I did an adjusted atkins version -- cauliflower " potato "

pancakes. When I had done them in the past from the atkins recipe, they

were hard to flip and broke up a lot. This time I added just a little

Arrowroot flour and they flip fine.

Chop up a small onion, add about 1/2 a head of raw cauliflower, chopped

fine ( or course and then chopped with a hand blender with the other

ingredients). 2 eggs, salt, pepper, about 1/2 cup or less arrowroot

flour, and splash of kefir, enough for it to mix without being too

runny. Heat plenty of coconut oil in a heavy frying pan. Add about a tbl

at a time only. They get nice and crispy on the edges and tender in the

middle. Yummy

Sounds great! It reminds me of a Korean version ... they mix

the eggs etc. with kimchi. Fries up very nicely and has

lots of flavor. They don't chop the kimchi up terribly

fine, it is in big chunks, and they pancakes come out

something like Egg Foo Young. You can do it with any leftover

vegies from the night before too.
