I was going to harvest the apples and juice them anyway. But now, after reading your post, I think I'll give the vinegar a try. Always wanted to make my own! Thanks for the project idea!!! Be nice to have several apple trees and produce 5 gallons all at once but it will be another 5-10 years before mine start producing.
