I drink about 15 lbs. of organic carrots a week, plus eat them in salads everyday. I have occasionally substituted grated sweet potato for carrots. Or was it yams?? I get them mixed up. It is beta-carotene that gives the color to these foods. No reason why you shouldn't eat all the cantaloupe you desire. Just eat them by themselves and do not mix with other fruits or veggies. But this is the case with most melons. I love cantaloupes and unfortunately they are out of season here.
