Joy, there are lots of "cheese" substitute recipes in the archives and probably in the files as well. Many are quite good. And we make our own almond milk that is just divine! Took some getting used to, anything new usually does. But now I can't even imagne drinking regular milk.

Peace, love, laughter

Ok. I have a husband who has suffered with chronic nasal congestion for years. He's a welder who breathes in probably lots of metal every day, not so good. He loves his ice cream, especially late at night. Loves his milk, with dinner. Tonight I asked him to experiment for one week, no dairy. He resisted, but then decided to do it, amazing to say the least. (This is a mid-western, meat and potatoes kind of a guy, oh, and plenty of diary) (no offense intended to anyone, by the way). From what I have learned, dairy is a huge cause of congestion. I told him that in a week, if he notices no improvement at all, he can always go back to his milk, cheese and ice cream. Of course, I'm crossing my fingers that he does notice an improvement. My question is, if he does notice an improvement, does anyone know of any spread like substance that I can make maybe in a food processor, that has

the flavor of cheese? If so, how do I make it? I think I could probably convince him to try the almond milk, I know I think the chocolate almond milk is great myself but I don't know if I ever tried the almond regular milk. I'd love to get my 5 yr old off of the dairy, so when she's older, she won't have to deal with changing over, it will just be a way of life for her. Ok, I'm ready for feedback. In kindness,Joy

Hi Joy,

Being a welder he is breathing in more than metal particles. There are

all those toxins from the flux and whatnot and some metals are just

plain toxic when welded (galvanized anything).

Dairy is one of the biggest causes of congestion yes. True all true.

Most of that has to do with the fact that it is mostly all pasteurized

and full of stuff that should not be there. Of course, breathing in all

those toxic fumes all day welding is not going to help his condition

any. I will truly be surprised if he notices any improvement in one

weeks time. But hey, stranger things have occurred. Keep your fingers

crossed.

I know of no substance other than cheese that has the flavor of cheese

and is natural. You can come somewhat close using seeds and making seed

cheeses but they really are not cheese though they make a great

substitute for it. I think you may find some seed cheese recipes in the

files and if not I have no doubt that Shari, Suzi or maybe Sharyn or

some of the others on this list will be more than happy to pass some

recipes. There are lots of them and they all claim to be good cheese

substitutes.

You would be better off, that is if you have the time, to make your own

almond milk. It will probably be much better. Most anything you are

going to buy will be pasteurized and will be void of enzymes. Just a

thought. But making it is easy to do. You can use almonds, hazel nuts

(my fav), and maybe some others that aren't too fatty. I do know that

quinoa can be made into a milk as can oats.

Thank you Don Quai. I appreciate your feedback and will forward to my

dh. He always hears it better from others than from me.

Peace to you also,

Joy

Joy,

rice milk with or without vanilla is great also. Check the food files and also the links file for places for more recipes.

i was a welder too, and drank lots of milk. then i welded, i got a

lot of stomach acid, i used to drink more milk for that. welding

companies supplied the milk every day for us with the idea to absorbe

the poisons from the welding fumes in the stomach. i have been off the

milk for over a year and have no more stomch problems, no more acid or

hartburn. i have been working on myself for a few years now and slowly

am getting healthier. i drik rice milk and chocolate soy milk once i

na while for the chocoholic in me (O; i have to say that rice milk

tastes way better than regular milk (to me) so i'm happy with the

switch. also a lot less slime in my nose and throat.......... and

ofcourse, i'm not welding anymore, just for play in the garage fixing

a muffler. i love welding, but not the sickly smoke and the way i

smell after a day of welding............. and lets not forget the

burns i get.........anyhoo, let your husband read www.notmilk.com this

is how i stopped milk at once! good luck, rik

i know what you mean. there are several types of masks with air

supply, always have good ventilation and equipment to suck out or away

the fumes. i'm sure he knows about those things, but it sometimes is

not like that on certain jobs......... i like the welding too and was

thinking of finding an other part time welding job. now i read your

mail and wonder if this is such a good idea for me.....healthwise NO!

artistic, yes! i will have to see.... there are plenty of websites and

some forums/groups he could discuss this. hope this helps, rik
