I have used olive oil in the past when making brownies or such and they always came out great. I would think that coconut oil would be good too. I used to bake alot when my son was younger and not too often these days. Now I should just do it to heat the place :)

If I have a recipe that calls for oil, as in a muffin recipe, what is the recommended oil to use? Canola isn't good. Would extra virgin olive oil be ok to bake with? I just can't imagine putting my Bariani in a muffin. I have some coconut oil, just got it, but think that using it would flavor the muffin too much. Anyone know?

I use apple sauce to replace the oil when used as an ingredient..

Me too, in fact i much prefer using applesauce in place of oil or butter in many baking recipes. My cakes turn out moister and they dont have all that FAT!

If using olive oil, I believe Bariani has an extra light oil that I may try.
