NO!! Don't put your precious coconut in the oven! That ruins all the great enzymes. Are you using the hard brown cocos? They are really easy to open. I do like you and stick a screwdriver in the soft "eye" and drain the water then I put it in a plastic bag and slam it on the driveway. Shatters and then I dig the meat out with a plain old table knife.

THE best coconuts are the young ones. They are white and conical shaped. I lay them on their side and while holding a large sharp knife I smack the coco and knife together into the coconut about 2" down from the point. It goes in deep enough that I can then turn it right side up and holding the coconut between the cupboard and my outside thigh I can work the knife around the top enough to cut it off and drain out the meat. Then I just work the knife in again the same way and cut off another small round and the hold is usually big enough to scoop out the tasty, soft, pudding-like, meat.

I'll look on the internet. There used to be a place that gave a tutorial in pictures of how to open a coconut.

They are the best! And if you are interested in good coconut butter, let me know and I can post the link to some butter from Sri Lanka. I've tried them all, Indian, Mexican, South Pacific, Philipino, Hawaiian and the stuff from Sri Lanka is the best. It is clean and doesn't have the burnt taste so many of them have. And DO NOT ever buy what is in the grocery store, it has been pasturized.

Oh, dear! You are missing out on ambrosia. Do you have a Chinatown or any Asian markets near you? That is where I buy mine. In fact it's called Everett Oriental and the owners are from the ines. And to make it more interesting the coconuts are from Thailand!

Where do you live? When some good ones come in I could FedEx one to you for a treat.

I have a coconut tree in my front yard in Florida, Shari, and I've never seen any white ones on it. Just green and then brown.

The white is what is under the green. They use machetes to hack away the green and it's white underneath. Then if you let them go and whack off the white, it's brown inside! The brown ones are called "mature coconuts".
