Serve a salad with plenty of fresh grated raw veggies in it as a first course when they are hungry. I grate zucchini and carrots together in a salad and DH recognizes them as "food". When I first met him, 20 some years ago, he did not recognize salad or most veggies as "food" so we are making progress! Make the salad as big as you dare. <G> Socond is the placement trick. Put meat (if you serve it) in front of them so they can cut it without dipping thier cuffs in the gravy. Then the veggies go on the right hand side of the meat, at 2 o'clock. Starches go at 10 o'clock. They have to reach over the veggies to get the starches and it is easier to eat the veggies. If you reverse the positions, the veggies often will get left on the plate.
