Hi Suzi and ,

Well, what done is done. I had mixed the stuff together as I went, Suzi,

so I couldn't just freeze the horseradish. And, as to making less, I

really had no concept as to how much I was making before I started.

Luckily, I remembered my six quart crockpot removable glass crock. I

wouldn't say that the vinegar is an inch over the veggies, but at least

they are covered. Tomorrow, I'm going to get a little more ginger. Then

I'll mix it altogether, and transfer the stuff into a couple of gallon

jars. It should be all good.

Now here's my question. Haven't I read in the past something about if

any water gets into this the whole thing could mold? I only thought of

this after washing the vegetables and chopping them up, probably with

some moisture still on them, and putting all the stuff together. Is this

whole batch doomed because of the washing of the veggies?

Should I check for mold? and if so, how often, and where should I look

for it? On the top?

Wold refrigerating it at some point be a good idea?

Don't refrigerate till after it is done and strained if you're going to .. I keep mine both ways... I put some in the frig for taking... I like it cold, but as Don said too, either is fine. And I agree, add some more acv.

Terri,

Sounds like it is going to be great! I haven't heard about avoiding water because of mold. It seems as if there is quite a bit of water in it already, naturally, from the veggies and such. Keeping it in the fridge is not a bad idea. That's what we do with ours. You're doing good, keep it up!!
