Peel leaves from each heart of Romaine Lettuce and fill them with a mixture from the food processor. Delicious! Pistachios are an ancient source of food native to western Asia and Asia Minor. Today, world producers include Iran, the USA, Turkey, Syria, Italy, Greece and Australia. Turkey produces 15-20 % of the world supply. Like other tree nuts, pistachios have numerous health benefits. Although pistachios contain a high level of fats, most of the fat content is monounsaturated, reducing significantly the risk for heart disease. Among all tree nuts, pistachios contain the highest level of phytosterols, which are directly associated with lowering cholesterol levels, and may offer protection from certain types of cancer. The Mediterranean Diet, associated with lowering the risk of heart disease, and the DASH (Dietary Approaches to Stop Hypertension), which focuses on minerals that protect against high blood pressure include pistachios and other tree nuts as an essential part of a healthy diet. Results from a new research study released at the 2001 Experimental Biology conference found that eating two, one-ounce servings of pistachios a day can help adults significantly lower their cholesterol levels. Pistachios joined the ranks of other nuts when clinical data was unveiled to show that if a person has a moderately high total cholesterol level (greater than 250mg/dl), the substitution of pistachios for other snack foods (20% of caloric intake) can significantly lower total cholesterol and LDL cholesterol levels by nearly 10%. –from new book "Beautiful On Raw" Suzi What is a weed?
