[High carbs = high sugar and high sugar feeds the fungus!! ..We must avoid high carbs for most part if we have had ANY serious prob with fungus/candida.. This is also why no grains, fruit or high carb veges.. Just make your salads taste really good with all the healthy stuff you CAN eat!! WORKS FOR ME!!!] ..I do know that when I culture my own milk using simply-found live probiotics in capsule form at the local health food store, AND I let it culture until it begins to separate into curds and whey (ie a little liquid whey will be evident when you see the finished thickened product), THEN ALL the lactose has been consumed by the probiotics in their propagating themselves. ...THEN I know that product is SAFE for me, and I have NO adverse reaction to it. I know then and ONLY then that MY home-done product is LOW-carb and good for me. Gives me tons of probiotics for the gut, as the capsules I use for initial starter have 12-14 strains in them!! (Once you make one batch, you can use that product as starter for up to 7 batches following..) [This REALLY IS easy to do: put the ORGANIC milk in a nice clean mason jar. Put either a couple caps of your starter OR 2 tablespoons of live-culture product in with the milk. [i open the caps..] Shake jar well capped. Put in warm place for 8-12 hours. Done. Refrigerate. (Warm places: I use top of radiator in winter, I use countertop in summer; in-between I use a cooler with a cheap electric heating pad on the bottom, set on high--it's an old pad; make sure the temp you use is WARM and not TOO HOT or you'll kill the cultures..) NO fear!!! :>)] This really is brainless and is the EASIEST way to ensure the BEST PRODUCT for your gut. ALSO, BE CERTAIN TO USE ONLY ORGANIC MILK!!!
