getting off dairy

Ok. I have a husband who has suffered with chronic nasal congestion for

years. He's a welder who breathes in probably lots of metal every day,

not so good. He loves his ice cream, especially late at night. Loves

his milk, with dinner. Tonight I asked him to experiment for one week,

no dairy. He resisted, but then decided to do it, amazing to say the

least. (This is a mid-western, meat and potatoes kind of a guy, oh, and

plenty of diary) (no offense intended to anyone, by the way). From what

I have learned, dairy is a huge cause of congestion. I told him that in

a week, if he notices no improvement at all, he can always go back to

his milk, cheese and ice cream. Of course, I'm crossing my fingers that

he does notice an improvement.

My question is, if he does notice an improvement, does anyone know of

any spread like substance that I can make maybe in a food processor,

that has the flavor of cheese? If so, how do I make it? I think I could

probably convince him to try the almond milk, I know I think the

chocolate almond milk is great myself but I don't know if I ever tried

the almond regular milk. I'd love to get my 5 yr old off of the dairy,

so when she's older, she won't have to deal with changing over, it will

just be a way of life for her.
