Raw Apple Muffin

Mix together in bowl #1 and set aside: 4 cups diced apples 1 cup Sucanat Cream together in bowl # 2: 1/2 cup light olive oil or melted butter 2 beaten eggs 1 tsp. vanilla extract In bowl #3, mix well: 2 cups

Summers Organic Sprouted Spelt Flour 2 tsp. baking powder 2 tsp. cinnamon 1 tsp. salt Mix the egg mix (bowl #2) into the apple mix (bowl #1). Sprinkle the flour mix (bowl #3) over this combination and stir well.

Quickly stir in: 1 cup chopped pecans or walnuts 1 cup raisins Spoon into muffin tins and bake for 25 minutes at 325 degrees, or until a toothpick or knife comes out clean. Serve warm with kefir cheese or cool.
