Ketchup

Makes 1 quart

3 c cannned tomato paste, preferably organic

1/4 c whey

1 tbs sea salt

1/2 c maple syrup

1/4 tsp cayenne pepper

3 cloves garlic, peeled and mashed

1/2 c homemade fish sauce or commercial fish sauce

Mix all ingredients until well blended. Place in a quart-sized, wide-mouth mason

jar. The top of the ketchup should be at least 1 inch below the top of the jar.

Leave at room temp. for about 2 days before transferring to refrigerator.

1 cup fresh tomatoes, chopped1 cup sun-dried tomatoes1 tablespoon minced garlic2 tablespoons ginger1/4 cup onion, chopped8 fresh basil leaves6 dates, pitted1/4 cup maple syrup1/4 cup olive oil1 tablespoon Nama Shoyuor 1 teaspoon Celtic sea saltThrow all the ingredients into a blender and puree. Last 2 weeks when refrigerated. Makes 1 1/2 cups.

1/2 cup dried tomatoes, soaked 2 hours1/4 cup apple cider vinegar1/4 cup raisins1/4 cup onion powder1 tablespoon salt
