The chef asked me " What is the difference between butter and cream, butter is just highly whipped cream? " I realized I did not have a very good answer. I said it was because the chemical makeup changes when it is whipped maybe...but I really didn't know. Can you help me out on this one? Thanks! I do know that the regular cream does have a sugar content so I am confused by the below. Thanks for your help on this.
