A lot of labels say raw, but many really are not – they are pasteurized. I was lucky to find a beekeeper on my street – he even had bee hives at my house for a while (pollinating my blueberries) – so I knew exactly how he “did” his honey. If you find a beekeeper near you, make sure you ask if it is raw, and if they say yes, ask what temperature he uses.
