Guest guest Posted November 22, 2005 Report Share Posted November 22, 2005 Carob Cookies 1 cup almonds, soaked overnight and dehydrated 1 cup dried coconut flakes 7 Zucchini 4-5 dates, pits removed 1/3 cup carob powder 1 Tbsp. vanilla 1/2 tsp. salt Grind almonds in a coffee grinder or dry Vita-Mix. Mix ground almonds and the coconut flakes together by hand in a bowl. Put aside. Peel zucchini. Then grate them into another bowl. Squeeze out the juice by hand. Stir in almond and coconut mix into zucchini pulp. Place dates, carob powder, vanilla and salt in a food processor and mix well. Add to almond-coconut-zucchini blend. Mix everything together with a spoon. Place by spoonfuls onto a teflex sheet in a dehydrator. Dehydrate at 95 degrees for 4 hours. Turn cookies over and remove teflex sheet. Continue dehydrating for another 2 hours or until desired crispness is reached. Suzi What is a weed?
