Cast iron is forged from the same material used to build railroads, and the iron content is not the type of iron assimilated by the human body, despite the many claims that it is. It is the same as " iron fortified " cereal-it contains metal shavings that are not the same type of iron the body can assimilate. (if you crush up some iron enriched cereal in a ziplock bag add a little water, and hold a magnet to the outside of the bag, you will see flecks of " iron " which is really nothing more than metal shavings. I LOVE La Cruesette pans, but find them to be too heavy to handle, so I have not researched them very well, but I have heard of no ill effects from them. I use only glass to cook in, and there is certainly a learning curve for adjusting temperatures so things don't stick. I have owned some really wonderful cookware over the years, only to discover that much of it was keeping me sick. It is a shame we often don't realize that a simple cherished mug, pan, or baking vessel can be the source of migraines, arthritis, digestive issues, and many other disorders. Sure, . I have learned to drop the stovetop temp down to the next level you would normally use. In other words, anything cooked on high in a metal pan is best on medium in glass, medium on low, etc. For baking, I drop the temp by about 15 to 25 degrees. Better still, I now cook everything in my solar oven, so the temp is never an issue, lol. I make a lot of "in the jar" meals by putting ingredients in mason jars and putting those in my solar oven.
