I did have good fats but not enough. My Mother created a recipe using buckwheat, and thickened with tapioca, no dairy, no sugars, which was made into a cake-like bread. My doctor begged me to have it since I could only eat 9 foods in the world at that point, and I was losing 3 lbs. a day (I had no choice about what I ate because everything else came back up). My doctor said even if it hurts, yet it stays down, please eat it. It did hurt like crazy but it stayed down, and after that I stopped losing weight. I figure it will take me at least 17 months to heal my thyroid because that's when I started having health issues and took antibiotics and got mercury fillings. So does that mean I will have to be on the strict diet until then or is it possible to start adding back in some foods before then? I'm already feeling so much better and my primary symptom of insomnia is gone. Yes, you can start adding some foods after you haven't had any die-off symptoms for 2 months. I suggest you do not change anything else for 5 days after you introduce them so you can see how you do on them. Also start with small amounts.
